Remember when I posted about our night in Brooklyn at Sara and Steve's back in July? We had such a wonderful time that night and we promised we'd get together again in August. Despite numerous attempts to make it happen, we couldn't reconnect in August or September. Since my parents were coming to town, we planned to have my sweet cousin Sara and her husband Steve come over for dinner on my parent's last night (Sara is my mom's niece ~ actually, she was my mom's first niece, since she's the daughter of my mother's oldest sister Nancy).
We had a fabulous evening. My parents did the grocery shopping for me (since I was home watching Nicole's daughter Mia), and then I prepared one of my favorite pasta dishes, a recipe I learned from my friend Meredith: Sun-dried Tomatoes and Goat Cheese over bow-tie pasta! I also baked panko-crusted chicken breasts and served it all with an arugula salad (with shaved parmesan and my home-made balsamic vinaigrette), brown rice, and bread. For dessert, we had fresh watermelon and pineapple.
After dinner, Sara helped my mom and me with the dishes, while John, my dad, and Steve played with Reagan. We all enjoyed catching up and the night slipped away too quickly ... they left around 11:30 and my parents headed upstairs to pack for their flight home. It was such a nice visit ...
