Superbowl

We enjoyed a very mellow Superbowl Sunday with Maribel, Marcelo and Joaquin, as well as Maribel's parents Nayda and Pepin.
Reagan selected matching shoes to go with her outfit ... they were summer type shoes, but I was impressed with the matching nonetheless!

A day does not go by without Reagan putting on her dress-up clothes

Avery's new favorite activity: climbing onto chairs! She's always so proud of herself! Unfortunately, once she climbs on, she always wants to stand on it. This isn't good when it's one of these rocking chairs. We've had to wedge the bottom of the rocking chair underneath the couch so that it stays rather stationary.

I love how Joaquin is right inbetween the ages of my girls because they both love playing with him ... it will be fun to watch them grow up together, since all their cousins here are older and their other cousins are in Utah.
Here's Avery signing "more" ... she used to just clap her hands together, but now she puts her pointer fingers and thumbs together in such a dainty way, then puts them together. Teaching Reagan and Avery signs for basic wants has been so helpful during this stage because it seems to bridge the communication gap. She can now tell me what she wants by signing EAT, MORE, MILK, ORANGE, and DOG when she sees the dogs. When it's time to go to bed, I sign SLEEP and she immediately rests her head on my shoulder. She's also saying lots of new words! She says MAMA, PAPA, AW-OH (when something falls), RUFF-RUFF (when we ask her what the dog says) and she says DAW-DAW for Dawson, or the dogs in general (I'm really not sure which). Of course, she jibber-jabbs all day long, so I'm sure more words are coming soon!

John showed Marcelo the new Espresso Maker that I got for free from the Martha Stewart Show ... Marcelo is the designated expresso maker for the family and he gave his approval of the big machine :) Here's a picture of Reagan helping John mix the sugar into the espresso.

Go Giants!!

By looking at the spread, you never would have guessed that this was the Trimm's first Super Bowl party! We had so much delicious food, and of course, we all ate way too much. My bacon-wrapped dates and spinach balls (the ugly green things on the white plate) were a huge hit, as well as the 7-layer dip. We had so much fun mingling, eating, and watching the game, so thanks for having us over, Lizzie and David!

Here's the recipe for the spinach balls, courtesy of Alexis Martinez:
  • 4 packages of frozen chopped spinach
  • 4 cups of herb stuffing mix (Pepperidge Farm)
  • 2 chopped onions (small to medium)
  • 8 eggs
  • 1 cup of Parmesan cheese
  • 1 tbsp of thyme
  • ½ tsp of salt
  • ½ tsp of pepper
  • 1 ½ cup of melted butter
  • ½ tsp of garlic powder

Squeeze water out of uncooked spinach. Mix all ingredients w/spinach in a mixing bowl. Roll 1-inch balls. Bake at 350 degrees for 20 minutes. Makes 50-60 balls.
